Join me on this culinary journey as I show you how to create a creamy, dreamy pumpkin spice creamer that’s not just a delicious addition to your morning coffee or tea, but also a celebration of the season’s bounty. Let’s dive into this delectable recipe that combines the essence of autumn with a commitment to your well-being.

Ingredients

Makes 4-6 batches of creamer

(I used my roasted pumpkin in a vegan pumpkin muffin recipe and had left over for 2 batches of creamer)

  • 1 Small Sweet Pie Pumpkin (roasted)
  • 1/2 cup Almond Milk
  • 1/4 cup Coconut Oil
  • 3-4 Tablespoons of Pumpkin Puree from the above small pumpkin
  • 1/2 teaspoon Pumpkin pie spice
  • 1 tsp ground cloves & star anise
  • 1 tsp Vanilla extract
  • 4 TBsp Organic pure maple syrup
  • 1/2 tsp Cinnamon stick

Time for cooking

Step 1:

Cut the pumpkin in half, scoop out the seeds

Save seeds for cleaning and roasting for a healthy snack!

Place the halved pumpkins in the oven face down on a tray at 350 degree Fahrenheit for 20-40 minutes, or until tender when fork is inserted in the flesh.

Puree in a food processor or blender or mash with whisk.

Step 2:

Place the almond milk, coconut oil, pumpkin puree, pumpkin pie spice, ground cloves, cinnamon, and anise, vanilla extract and maple syrup to a sauce pan.

Heat until just bubbling around the edges.

Turn the heat to low and heat below the simmer point for 4 minutes.

Turn off heat and let steep as long as you desire covered.

Step 3:

Pour the mixer into a mason jar.

If there are junks of pumpkin, that’s ok. You will be simmering this again when you make your latte milk.

Store in the refrigerator

Now for the Latte!!!

Ingredients

These can be adjusted in oz’s based on your preference

6 oz Almond milk

3 oz Pumpkin Spice Creamer (from above)

4 oz Chaga Mushroom Tea (or coffee)

1 TBsp Raw honey or to taste (optional)

Step 1

Pour in Almond milk, and Pumpkin Spice Creamer and bring to just below simmer.

Step 2

There are two ways you can do this step.

If you are using Chaga Tea, or an other form of tea, Pour in the tea to the milk mixture.

If you are making a coffee, pour your coffee into your cup.

Heat until desired temperature. Never let this mixture come to a rolling or even bubbling boil. Watch it closely.

Step 3

Pour your creamer mixture into your cup (or coffee) through a find strainer.

Add honey to sweeten to taste and enjoy!

As you savor each velvety sip of your Sugar-Free Vegan Pumpkin Spice Creamer-infused coffee or tea, take a moment to reflect on the unique beauty that lies within you.
